Journey Cakes, history says it was preferred by those who had to travel and needed a fast meal that could remain ready to eat at any time. There are many variations, depending where you are in the world. In every country where the journey cake is consumed, there is someone or a few people, who will swear that their cakes are the best. As there are many recipes, there are also many names; one thing for certain, everyone is still talking about the “journey cake” (Johnny cake for many)
The version I present is from a Tortolian/St. Tomian British/American Virgin Islands perspective. A combination of flour, salt, butter, Crisco, baking powder, milk and water, with some experience of knowing the right amount to get the taste and texture desired, you will have a journey Cake to boast about.
